Almond flour can be a good alternative for anyone who, for one reason or another, either cannot eat wheat flour or simply prefers not to. You can use Sukrin almond flour for anything you would use flour for. Almond flour behaves slightly differently in comparison to regular flour because it is gluten-free. Gluten helps yeast dough to rise because gluten entraps small gas bubbles in the dough. Gluten also acts as a binding agent and makes the dough easier to work with. If you bake with yeast dough, you can replace 10 to 20% of the flour with almond flour. In this case you have to increase the amount of liquid by 5 to 10%.
If your recipe contains no yeast at all, you can replace 100% of the flour with almond flour. Since almond flour is high in fiber, it will absorb more liquid than other types of flour. Therefore, if you replace the flour 100% with almond flour, you should reduce the amount of almond flour by 50 to 60% or you should increase the amount of liquid.
